Hash Brown Chicken Casserole

Cheesy and delicious, this hash brown chicken casserole has a crunchy topping.

I made this Hash Brown Chicken Casserole recipe a few days ago, and I absolutely loved it and enjoyed it with my family. It came out very tasty and flavorful.

Ingredients:

2 lbs frozen hash brown potatoes, Southern Style
2 cups shredded cheddar cheese
1/2 teaspoon salt and pepper
1 cup frozen peas and carrots
1/2 cup summer sweet corn, canned
2 C sour cream or plain yogurt
1 can cream of chicken soup
1/3 cup milk
3 cups cooked, shredded roasted chicken
Bread crumbs or Corn Flake crumbs

Directions:

Heat the oven to 400 degrees. Place the potatoes in 9 by 13-inch pan. In a large bowl, mix together the remaining ingredients, except the bread crumbs. Layer the mixture over the potatoes. Sprinkle crumbs on top. Bake for 1 hour or until the top is golden brown.

  • Highly recommended. Very tasty, and quite popular at the Christmas brunch. I would double the amount of cornflake topping, it’s the best part! Easy to prepare for a big crow
  • I made this for a family gathering and everyone loved it. I substituted the cream of chicken with cream of cheddar cheese soup for my sister’s vegetarian fiance-yum!
  • This recipe is great!! My family just loves it!! I used two cans of cream of chicken or cream of mushroom and omit the butter. Also, it is really great with a 4oz can of diced green chiles!!! mmm…
  • This recipe was really good! I’ve made it 3 times in the last two weeks – my Husband loves it! Try using cheddar cheese soup instead of the cream of chicken soup. That made the recipe even better!!!
