Peach Cake

Summertime Peach Delight Cake


For the Cake:
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup unsalted butter, softened
2 cups granulated sugar
4 eggs
1 teaspoon vanilla extract
1 cup sour cream
2 cups fresh peaches, peeled and chopped

For the Topping:
1/2 cup granulated sugar
1 teaspoon ground cinnamon
1/4 cup unsalted butter, melted


Preheat the oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
In a large bowl, cream together 1 cup butter and 2 cups sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla. Fold in the sour cream and flour mixture, mixing until just incorporated. Fold in chopped peaches.
Pour batter into the prepared pan. Combine 1/2 cup sugar and cinnamon in a small bowl and sprinkle over the top of the batter.
Drizzle melted butter evenly over the top.
Bake in the preheated oven for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean.
Let cool in the pan on a wire rack before slicing.
