Rustic Blueberry Crumble Delight


For the Filling:
4 cups fresh blueberries
1/3 cup sugar
1 tablespoon lemon juice
2 teaspoons cornstarch

For the Topping:
3/4 cup all-purpose flour
1/2 cup rolled oats
1/3 cup light brown sugar
1/3 cup granulated sugar
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup unsalted butter, cold and diced


Preheat the oven to 350°F (175°C).

For the filling: In a large bowl, combine blueberries, sugar, lemon juice, and cornstarch. Toss to coat evenly and pour into a greased 9-inch pie dish or baking dish.

For the topping: In another bowl, mix together flour, oats, both sugars, cinnamon, and salt. Add the cold butter and use your fingers or a pastry cutter to blend the mixture until it resembles coarse crumbs.
Sprinkle the crumb topping evenly over the blueberry filling.
Bake in the preheated oven for about 35-40 minutes, or until the topping is golden brown and the filling is bubbly.
Allow to cool slightly before serving, ideally with vanilla ice cream or whipped cream.
